Pumpkin Muffins

1 cup whole wheat flour

2 tsp baking powder

¼ tsp baking soda

½ tsp cinnamon

½ tsp ginger

¼ cup corn oil

¼ cup honey

¼ cup milk

¾ cup pumpkin

½ cup raisins

1 cup quick Quaker Oats

 

Mix first 5 ingredients together. In large bowl, beat oil, honey and milk. Blend in pumpkin, oats and raisins. Pour into Pam-sprayed muffin tins. Bake at 425° for 18 minutes. Makes 12 muffins.
