Pumpkin Soup in a Shell

2 tbsp butter

½ cup chopped onion

4 cups chicken stock

¼ tsp ground ginger

¼ tsp ground nutmeg

3 cups cooked pumpkin

Corn chips

 

In a soup pot, melt the butter over medium heat on top of the stove. Sauté the onion in it for five minutes. Add the stock, ginger, nutmeg, and pumpkin and bring the mixture to a boil. Turn heat down to low and simmer for 10 minutes until it is thick. Stir occasionally so it doesn’t stick. Make a soup tureen out of a large pumpkin. Serve with corn chips.
