Pumpkin Bars

Ingredients:

  1. 1 Cup oil
  2. 2 Cup sugar
  3. 2 Cup sifted flour
  4. 2 tsp baking powder
  5. 1/2 tsp salt
  6. 1 tsp baking soda
  7. 2 tsp ground cinnamon
  8. 2 Cup canned or cooked pumpkin
  9. 4 Eggs

Mix oil, sugar, pumpkin, and eggs well. Sift dry ingredients together, add to first mixture and mix well. Pour into greased 10″ X 15″ jelly roll pan (cookie sheet with sides.) Bake at 350 for 25 minutes. When cool, frost.

Frosting:

  1. 3 oz cream cheese
  2. 1 tsp vanilla
  3. 6 Tbsp butter or margarine
  4. 1 Tbsp cream
  5. 1 3/4 Cup powdered sugar

Mix well together. Spread on cooled bars. Cut into bars.

Optional: Use purchased canned cream cheese frosting.
